Method Step 1Place the butter and flour in the bowl of a food processor and process until it resembles fine breadcrumbs. Add egg yolk and water, and process until dough just starts to come together. Turn dough onto a lightly floured surface and knead until smooth. Shape into a disc and place in the fridge for 30 minutes to rest. Step 2Roll pastry into a 15 x 40cm rectangle, 3mm thick.
