Marry Me Pasta
Nothing says love like pasta. This creamy sauce will have you falling in love with yourself for making it. It’s unexpectedly easy to make, but would impress anybody. If you are looking for a Valentine’s Day meal to make or an easy weeknight dinner, this is the answer. Ingredients
- Kosher salt
- 1 lb.rigatoni
- 1 Tbsp.extra-virgin olive oil
- 3cloves garlic, finely chopped
- 1 Tbsp.fresh thyme leaves
- 1/2 tsp.crushed red pepper flakes
- 1/2 c.chopped sun-dried tomatoes
- 3/4 c.heavy cream
- 3/4 c.low-sodium chicken or vegetable broth
- 1/2 c.finely grated Parmesan, plus more for serving
- Freshly ground black pepper
- Torn fresh basil, for serving
Directions

- Step 1In a large pot of boiling salted water, cook pasta, stirring occasionally, until al dente according to package directions. Reserve 1/2 cup pasta water, then drain.
- Step 2Meanwhile, in a large, high-sided skillet over medium heat, heat oil. Add garlic, thyme, and red pepper and cook, stirring, until fragrant, about 1 minute. Add tomatoes, then slowly pour in cream and broth. Bring to a simmer. Add Parmesan and cook, stirring, until cheese is melted and sauce is starting to thicken, about 5 minutes; season with salt and black pepper.
- Step 3Add pasta and 1/4 cup reserved pasta water and stir to coat. Cook, stirring frequently and adding more pasta water as needed, until sauce is glossy and fully coats pasta, about 2 minutes more.
- Step 4Divide pasta among bowls. Top with Parmesan and basil.
